This is a really good product and beautifully packaged. The shell has been peeled off very carefully by hand, leaving the pincer for you to hold. Be careful of the cartilage in the centre of the meat! If you have not done this before eat the first one carefully until you can see where the cartilage is. Lobsters are caught in creels in the traditional way to the West of the Hebrides between April and October every year. When the winter storms come in no fishing can be carried out, so this is not always available out of season, but sometimes we can have till Christmas as lobsters are stored towards the end of the season in anticipation of a strong Christmas market when discerning buyers much prefer the Scottish lobster and pay a premium for it. We can send the lobster cooked and prices fluctuate over the season with prices lower in May and June and can be much more expensive in the run up to Christmas. Creel caught Langoustine are caught in creels on the East of the Hebrides, sometimes in waters as deep as 100 fathoms! The langoustine live in holes or burrows in the soft muddy bottom and are tempted out and into the creels by herring bait. The smaller ones can escape through the netting mesh. Did you know that when you go abroad and eat Langoustine it almost certainly came from Scotland? One of the most popular of seafoods. This product has a 7 day shelf life in chill.

Some lobsters can grow to be very big if they survive all their gladatorial battles on the rugged sea bed. They make a magnificent display at banquets or such. Males have enormous claws and both claws are different. One is called a crusher claw and the other is a scissors claw ! The female has smaller claws and a wider tail and in its lifetime can release millions of eggs of which only a small number can reach maturity. All very large females are released back to the sea to ensure good stock recruitment and now this is once again a very vibrant fishery in the Hebrides. This product has a 7 day shelf life in chill.

Pure hand picked crab claw meat is very labour intensive and is not to be confused with white crab meat which can also come from other parts of the crab and is inferior .Also mechanical means of meat extraction causes meat to be inferior and is cheaper as water is used in the process. Crabs are also caught in creels in the traditional method year round. The best meat is the crab claws and the male has much larger claws than the female, so it is more valuable for its claws.
